      <image:title>Blog - As You Were Sauvignon Blanc &amp;amp; Easter: A Match Made in Heaven</image:title>
      <image:caption>There are two main course options that are classic Easter staples: ham and lamb. I would not complain about either option, but my pairing recommendations do differ depending on which you choose. If you’re going with a rack of lamb, I’d recommend a Rhone varietal or a blend of a couple Rhone varietals such as Slouch Hat’s Parade Rest Grenache, Syrah, and Mourvèdre (GSM) blend. The gaminess of the Mourvèdre blended with the spiciness of the Syrah and red fruit of the Grenache is a perfect match for lamb. In fact, well before Slouch Hat was even born, lamb with a Rhone varietal blend was my go-to show off pairing. I will always recommend it.  If you choose ham, you can still definitely enjoy the Parade Rest GSM – drinking what you enjoy will always be the best pairing. However, I would recommend Slouch Hat’s As You Were Sauvignon Blanc. The acidity, lightness, and fresh floral and herb flavors of the As You Were Sauvignon Blanc will slice through the fattiness of the ham and anything it’s been glazed with while complimenting its savory deliciousness.</image:caption>

      <image:title>Blog - Thanksgiving with Slouch Hat Wines</image:title>
      <image:caption>Thanksgiving is a holiday of abundance. Therefore, there’s a good chance you could blindly pick a wine and it’ll pair with something on the table. In a perfect world you could pair each food item with a different wine and have a wonderful culinary experience. However, that sounds expensive, so save that for the fancy restaurants. In my opinion you don’t need to focus on the nitty gritty details of each item being served. You should focus instead on the broad theme. What’s the biggest theme of a Thanksgiving menu? FAT! Oh yeah, throw that diet out because it’s cheat day (read: week). What wines pair well with fatty meals? You should be looking for something with good acidity. Acidity will cut through the fat and allow you to enjoy the meal while also enjoying the wine. I’ll make this really easy. If you’re a white wine fan, a Chardonnay, dry Riesling, or, you guessed it, a Sauvignon Blanc would be a great choice! The high acidity of the As You Were Sauvignon Blanc gives it enough backbone and structure to slice through all that fat and still retain its herbaceous and tropical notes. The thought of a perfectly cooked turkey and a side of green bean casserole with a glass of Slouch Hat’s As You Were Sauvignon Blanc is currently making my mouth water.</image:caption>

      <image:title>Blog - Wine Diamonds</image:title>
      <image:caption>Tartrate crystals, or potassium bitartrate, or “wine diamonds,” occur in both red and white wines. You would expect to find them more in red wine since the pulp of red grapes soak in the skins during maceration and fermentation to give the wine a longer opportunity to soak up tannins, anthocyanin (gives red wine it’s color), and other compounds, including potassium. A white wine is crushed and pressed off the skins, so it has significantly less time to incorporate potassium into the juice. However, we normally refridgerate red wines, so we do not give the tartrate crystals a chance to form. We do chill white wines and, therefore, mostly associate tartrate crystals with white wine. Although it can be shocking to see come out of the bottle, it is completely harmless and seen as a sign of quality by many wine professionals, since it means the wine wasn’t over processed. Most wines that are made for mass distribution undergo a process called cold stabilization before bottling. This process simply chills the wine in the tank to create the chemical reaction that leads to tartrate crystals. Then the wine is filtered to remove all those crystals and create a perfectly clear wine. However, in doing so the winery is sacrificing color, acidity, and aroma to achieve clarity. At Slouch Hat Wines we chose to avoid cold stabilization for the 2022 As You Were Sauvignon Blanc, because our hope was to craft a Sauvignon Blanc with lower acidity and more tropical flavors, which requires the potassium and acid that would have been filtered out.</image:caption>

      <image:caption>Very simple, right? Right. Unfortunately, the states used this system as a foundation and each state then created its own laws to regulate it. Some states allow producers to distribute their own product. Others retain significant, if not, total control over the distribution and sale of alcohol. Have you ever been to a local ABC store in Mississippi or Virginia?  The government is actually the retailer in these states. Sounds anti-capitalistic to me. In other states the government decided to protect the distributors by creating franchise laws. These laws require that the state approve the termination of a business partnership between the producer and the distributor. Hope you get it right the first time, because unlike marriage, it’s hard to dissolve. Finally, many states have started to allow direct to consumer sales. This means you can go online and order your favorite wine directly from the winery and it will show up at your door. This is a phenomenal advancement. Unfortunately, with 50 states comes 50 different laws. In certain states it’s a felony to ship wine directly to consumers or to ship more than what is allowed, so you better keep your state laws straight or you’re facing prison!</image:caption>

The Greeks invented a lot of incredible things: democracy, Olympic games, Pythagorean Theorem, western philosophy (hedonism anyone?), Greek tragedies and comedies, and Dionysus (or maybe Dionysus, the god of grape harvest, winemaking, and fertility, invented the Greeks!). However, it is unlikely they invented the cork closure, since cork comes from cork trees, which grow primarily in Southern Portugal and Spain. Although they didn’t invent it, the ancient Greeks are the first civilization we believe used cork as a closure (the Egyptians may have also began using cork around this same time). Being the wise people they were, they knew when to adopt technologies better than their inventions and using cork as a closure was one of these wise adoptions.</image:title>

      <image:title>Blog - Paws on the Pavement- Closures - TCA (2, 4, 6 – trichloroanisole) is a compound that is responsible for “corked” wine. This is the musty, wet cardboard, damp basement-like scent you sometimes pick up on a wine. Chlorine facilitates TCA growth and until the mid-1990s, corks were washed with chlorine… yikes.  Today, chlorine can be found in trace amounts in municipal water, which is used to clean winery equipment, so it can still sometimes spread to corks. TCA became such an issue that a group of wineries in the Clare Valley of Australia grouped together to bottle their entire 2000 vintage of Resiling in screw cap bottles. Within a few years a vast majority of Australian and New Zealand wines were bottled with screw caps and as winemakers began to notice that consumers were not particularly turned off by screw caps, wineries all over the world slowly began to follow suit.</image:title>

      <image:caption>I was 24 at the time and hadn’t invested in cryptocurrency, so I didn’t see myself making a ton of money overnight. With that realization, I turned down full rides to law and business schools and went to work for minimum wage at a winery once I left the Marine Corps. My first job was in the tasting room, and I loved every moment of it. During this time, I also began taking Wine &amp; Spirit Education Trust (WSET) classes at night and snuck into the production room to learn what I could from the production team during slow periods. I was thoroughly enjoying life, but I was also not making any money and working in a very fraternity-like atmosphere with no opportunity for upward mobility. I needed somewhere I could learn more, make more, and have a more professional experience.</image:caption>

      <image:caption>Over the years (millions and millions of years) the Santa Ynez Fault formed to the west of the San Andres Fault running towards the coast. The Santa Ynez Mountains formed on the southern side of the Santa Ynez Fault and run west to east - yep, west to east. This mountain range created a barrier between the Santa Ynez Valley and the pacific coastline to the south. The northern border of the valley is made up by the Purisima Hills and the San Rafael Mountains. The San Rafael Mountains run west to east as well, while the Purisima Hills run generally northwest to southeast. All of this creates a funnel shaped valley that opens as you near the Pacific Ocean on the western coastline. Fun Fact: The Santa Ynez and San Rafael Mountains are a part of the Transverse Mountain Ranges. These mountain ranges are the only ranges on the coast of North and South America that run west to east rather than north to south.</image:caption>

      <image:caption>Climate is just one factor when considering a region’s wine growing capabilities, though. Obviously, the land must also be exceptionally fertile for so many vineyards to do so well, right? Wrong! Contrary to what many believe, the best vineyard locations in the world are found on less fertile soil. For millions of years this part of California was under the ocean and when the water receded it left behind a ton of fossilized algae and other marine fossils. This sandy, diatomaceous earth can be found on the valley floor of Santa Ynez, while the foothills vary between clay, sandy and shale loam with high concentrations of limestone in some areas and rocky sub-soil in others. All of these different soil types lead to different potential flavors in your wines.</image:caption>

      <image:caption>Syrah’s history is heavily debated. For centuries, it has grown very well and made incredible wines in both the Northern and Southern parts of the Rhone Valley of France. In fact, it is one of only 14 grape varieties that are allowed to be blended in the Southern Rhone Valley and the only grape variety allowed to make red wine in the Northern Rhone. Naturally, if something is going well humans feel obligated to create an awesome, marketable origin story for it (e.g., any popular superhero). Fortunately for us, poor 18th century spelling led to multiple theories as to where Syrah originated and fueled over a century long debate. A Scotsman named James Busby created most of the chaos entirely because of his inept spelling abilities. Busby is responsible for introducing viticulture in Australia, for which he deserves a thank you.</image:caption>

      <image:caption>The second theory is that Syrah came from a city in Persia, modern-day Iran, called Shiraz. Archeologists discovered six ancient clay jars around Shiraz in the 1960s. One of these jars was determined to have wine residue at the bottom. As it turns out, the Persians were drinking wine nearly 7,000 years ago. We also know the citizens of Shiraz were cultivating grapes around 2,500 BC. Fast forward a couple of millennia to the First Crusade and supposedly a crusader named Gaspard de Stérimberg returned to France with a couple of Persian vine cuttings hidden in his robe. After his return, de Stérimberg became a hermit on a hillside in the Northern Rhone where he lived in peace and grew grapes. Guess what? That hillside became Hermitage, which is one of the most famous appellations in France. Oh, and as earlier mentioned, the Northern Rhone makes only one kind of red wine – Syrah! Shocking!</image:caption>

      <image:caption>After learning about “cat pee” in New Zealand Sauvignon Blanc, I headed out of the cellar to learn more about Slouch Hat Wines’ Sauvignon Blanc. Here’s what I learned: California is known for riper, less acidic Sauvignon Blancs. Think floral, white peach, melon, and citrus notes. This is especially true in Ballard Canyon, one of the most prestigious AVAs (American Viticultural Areas) on the Central Coast. Slouch Hat Wines’ Sauvignon Blanc comes from Tierra Alta Vineyards, which is the northernmost vineyard in Ballard Canyon. Within Tierra Alta the Sauvignon Blanc blocks are in the Northern most section at 1300 feet above sea level, which is the highest altitude in the vineyard, so we can proudly say our wine is the highest and northern most wine in Ballard Canyon. Does that matter? Of course, but more importantly, it’s great for marketing.</image:caption>
